Here are some other ideas worth considering:
1. a video documentary (I have examples)
2. a survey study; public opinion poll
3. an interview of some expert on your topic (not a self-proclaimed expert; rather, a government official or college professor, etc.)
4. Can you come up with an interesting idea? Run it by me and maybe it will work.

do you think we could do something where we just do an overall (formal) report of the data collected? in other words, have a short write up with our thesis (opinion) and support, and then follow it up with graphics such as charts, graphs, statistics, etc... and put it all together in a binder?

Yes, but your description is too general. We would have to work out specifics.
for the interview...... if you conducted the interview and videotaped it would we just turn it in to you or would we present it to the class with an intro and conclusion?
